Manuel, owner of Finca El Gran Cañón, Agua Linda District, Cienaga Municipality, has dedicated himself to applying his knowledge as Agricultural Engineer, since he finished college, 20 years ago. He has always been involved in coffee growing in the region of Sierra Nevada de Santa Marta. This is a special mountain range that is born in the Caribbean Ocean and climbs to 5,500 masl, the highest rising mountains on earth. For 7 years he has been part of the Innovakit team, with Hugo Lopez and together they have developed a post-harvest process which uses ZERO water. This is a fundamental requirement for this region that has a shortage of water yet supplies all the water needed by the city and areas of Santa Marta. Manuel is a certified Barista that is passionate about the coffees from Sierra Nevada and using his natural process has developed a Castillo variety coffee with the highest qualities, bringing special flavor notes of dark chocolate, yet at the same time a very sweet and enduring pleasant flavor.
My second comment on this extraordinary coffee. I made a Manuel Matta Aeropress for a Russian friend (who had never tasted it) a couple of days ago. He couldn't stop laughing. When I asked why, he said - "because I can't believe how good this coffee is"
We tried Manuel Matta coffee first and what a marvelous surprise!!! The aroma, the after flavor, all the attributes just right!!! And so fresh!! Thank you!!
